While we won’t attempt to sway you into swapping out your turkey for a vegetable main, we will let this centerpiece-worthy cabbage do the talking for us. Coated in a generous amount of salty Parmesan cheese that crisps and blisters in the oven, savoy cabbage wedges transform into a showstopping main that can upstage even the flashiest of birds. The sauce—a cheesy, lemony cream—not only provides the perfect landing place for the cabbage wedges but works double duty in this recipe: Each cabbage wedge is brushed in the cheese sauce, then sprinkled with Parmesan before going into the oven. The sauce acts like a flavorful glue that keeps the wedges coated in a blanket of cheese. Any left over is heated and served below the wedges while a showering of chopped hazelnuts with parsley provides a contrasting texture and freshness that cuts through the richness. And for anyone wondering if they can swap out savoy cabbage for green: We don’t recommend it. Savoy cabbage is much drier than standard green varieties and ensures the wedges turn out crisp and golden instead of limp and mushy.

cup blanched hazelnuts

Extra-virgin olive oil (for baking sheets)

large head of savoy cabbage (about 3 lb.)

oz. Gruyère, coarsely grated (about 1½ cups)

Tbsp. cornstarch

1⅔

cups (or more) heavy cream

Tbsp. Dijon mustard

garlic cloves, finely grated

tsp. finely grated lemon zest, divided

tsp. Diamond Crystal or ½ tsp. Morton kosher salt, plus more

tsp. freshly ground pepper, plus more

oz. Parmesan, finely grated (about 3 cups), plus more for serving

cup finely chopped parsley

Preparation

  1. Step 1

    Place racks in middle and lower third of oven; preheat to 350°. Toast ½ cup blanched hazelnuts on a rimmed baking sheet, tossing once, until golden brown, 8–10 minutes. Let cool, then coarsely chop; set aside. Increase oven temperature to 375°.

    Step 2

    Generously coat 2 large rimmed baking sheets with extra-virgin olive oil. Cut 1 large head of savoy cabbage (about 3 lb.) in half through core; cut each half into 6–8 wedges, keeping core intact.

    Step 3

    Toss 6 oz. Gruyère, coarsely grated (about 1½ cups), and 1 Tbsp. cornstarch in a medium bowl to combine. Bring 1⅔ cups heavy cream, 2 Tbsp. Dijon mustard, 2 garlic cloves, finely grated, 1 tsp. finely grated lemon zest, 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt, and 1 tsp. freshly ground pepper to a simmer in a medium saucepan. Add Gruyère mixture a handful at a time, whisking after each addition until melted. Cook sauce, whisking constantly, until thick enough to coat a spoon, about 1 minute. Remove from heat. Taste cheese sauce and season with more salt and/or pepper if needed.

    Step 4

    Working with one wedge at a time, brush cabbage on all sides with about half of cheese sauce. Sprinkle very generously on all sides with 5 oz. Parmesan, finely grated (about 3 cups), pressing to adhere. Divide wedges, cut sides down, between prepared baking sheets, spacing at least 1" apart.

    Step 5

    Roast cabbage until beginning to brown on top, 30–35 minutes (don’t fret if stray bits of cheese on baking sheet burn slightly). Turn wedges over and rotate baking sheets top to bottom and front to back. Continue to roast until golden brown in spots on the other side, 20–25 minutes longer.

    Step 6

    Meanwhile, mix ¼ cup finely chopped parsley, reserved toasted hazelnuts, and remaining ½ tsp. finely grated lemon zest in a small bowl to combine. Season with salt and pepper.

    Step 7

    Heat broiler. Consolidate cabbage on one of the baking sheets and broil on upper rack, watching closely, until dark brown and charred in spots, about 3 minutes.

    Step 8

    When ready to serve, heat remaining cheese sauce over medium, whisking often and loosening with a splash or so of cream if needed, just until steaming, about 2 minutes. Spread sauce in a shallow serving dish or on a platter and arrange cabbage wedges on top. Scatter parsley mixture over, then top with more Parmesan.

  • Can anyone tell me where the hazelnuts go besides with the parsley. Says “reserved hazelnuts “. Where?

  • This was delicious! I couldn’t get ahold of Savoy cabbage so I used Napa instead and it worked great. The only thing I would say is that my cabbage roasted plenty in the first 35 minutes.

  • I think if you add enough cream and cheese to anything it will come out super tasty. However the flavor in this recipe is perfect. Brought this to an early 'friendsgiving' and it was the biggest hit on the table. Everyone asked for the recipe.

  • Cheese overload on top of lots of heavy cream. Not sure how you'd even taste the cabbage. This is not a recipe I would ever make. There are so many other really good and healthy roasted cabbage recipes out there. I usually don't critique a recipe unless I make it but this one reads deadly.
